I think I was wrong. I think the gunk floating at the top is NOT the lees, and that the lees are actually the particles sitting at the bottom. That's quite unfortunate, because in thinking that I needed to keep the stuff at the top, I grabbed a bunch of it and stuffed it into the wine bottles. The *narrow-necked* wine bottles. Oh well. I suppose it's not much different now than being in the original container, except that I've lost a great deal of my yeast. Hopefully, there's still enough left in there to create alcohol. It's still bubbling, so I guess technically it's still in phase one... man, this first attempt isn't going perfectly. That's ok. It's a learning process.
